The Wine

Combe Hay Vineyard specialises in producing an elegant, crisp, dry white wine. This distinctive wine is crafted from three German grape varieties: Schönburger, Müller-Thurgau, and Huxelrebe, selected for their ability to express the vineyard's unique surroundings and contribute to its balanced flavour profile. While specific wine awards are not listed, the wine has received highly positive reviews, with experts and consumers describing it as a "revelation" and "immensely quaffable," praised for its clean, floral, and subtly fruity characteristics.

The vineyard is deeply committed to sustainability, adopting a regenerative and holistic approach to viticulture. They adhere to organic principles by avoiding destructive chemicals and use biodynamic sprays made from organic plants harvested on their partially re-wilded site. This includes practices like manual weeding instead of chemical herbicides. Their regenerative philosophy focuses on minimally disturbing the soil and allowing nature to find its balance, fostering a diverse ecosystem within the vineyard. They are also actively involved in creating diverse habitats, such as a nature pond, and encouraging beneficial species.

Combe Hay Vineyard works closely with a winemaker partner who practices low-intervention, natural winemaking.
