The name is inspired by the county's "ever in flight" Martlets, and represents the vineyard's own restless pursuit of great wine.

Everflyht is a family-run, single-estate vineyard set on the slopes of the South Downs near Ditchling, with a clear focus on producing high-quality English sparkling wine. Visits are structured and purposeful, centred on understanding the vineyard, the wines, and the regenerative approach behind them rather than casual drop-in hospitality.

Everflyht hosts a limited number of seasonal tour and tasting days, typically running from spring through autumn. All visits must be booked in advance via their website.
Bookings:
Tickets for tours and tastings must be booked online ahead of time. Private tours are available for groups of approximately 10–16 people by arrangement.
Tours & Tastings:
Standard experiences last around two to two-and-a-half hours. These include a guided vineyard walk followed by a seated tasting of three Everflyht sparkling wines, accompanied by a selection of charcuterie and cheese served in the tasting space.
Special Events:
Everflyht runs a small programme of ticketed events throughout the year, including experiences such as Art in the Vines, wellness-focused vineyard events, and occasional stargazing evenings.
Facilities:
There is no restaurant on site and no casual drop-in bar. Food is provided only as part of booked tasting experiences. There is no on-site accommodation.
Dogs:
Well-behaved dogs on leads are welcome to accompany visitors on vineyard tours.

The Wine

Everflyht produces English sparkling wines exclusively from grapes grown on its own single estate. The vineyard is planted with Chardonnay, Pinot Noir, and Pinot Meunier, and the range currently focuses on a Brut NV and a Rosé de Saignée.
The Everflyht Brut NV received silver medals at the International Wine & Spirit Competition, the International Wine Challenge, and the WineGB Awards in its first international entries in 2023. Their Rosé de Saignée 2019 was highlighted by BBC Good Food in 2022.
Viticulture at Everflyht follows a regenerative approach, with a strong emphasis on soil health, cover cropping, and biodiversity. Large areas of land are dedicated to wildflower meadows and tree planting to support wildlife and pollinators. While not certified organic, the vineyard uses organic practices where possible and takes a pragmatic approach based on vine health and site conditions.
Everflyht does not operate an on-site winery. Winemaking is carried out at Hambledon Vineyard using Everflyht’s own vessels and barrels, allowing close control over style while working off site.
