The Wine
Everflyht specializes in producing exquisite English Sparkling Wine from grapes grown entirely on their single estate. They primarily cultivate the classic sparkling grape varieties: Chardonnay, Pinot Noir, and Pinot Meunier. Their core offerings include a non-vintage Brut and a Sparkling Rosé de Saignée.Their commitment to quality has been recognised with several accolades. The Everflyht Brut NV, in its first international entries in 2023, won silver medals at the International Wine and Spirit Competition, the International Wine Challenge, and the Wine GB Awards. Additionally, their Rosé de Saignée 2019 was highlighted as the "best Rosé" by BBC Good Food in 2022.
Since its establishment in 2016, Everflyht has pioneered a journey towards regenerative viticulture. This involves active soil management to increase organic matter and sequester carbon, extensive planting of cover crops to promote insect and pollinator populations, and dedicating 3.5 hectares of land to biodiversity through tree planting and wildflower meadows. While they are moving towards organic practices and were almost fully organic in 2023, their approach is pragmatic, prioritising the health of the vines and the environment.
Everflyht does not have its own winery on site. Instead, their wines are crafted at Hambledon Vineyard, where they utilise their own vessels and barrels to ensure their distinct Everflyht style.
