The Wine

St Hilary Vineyard produces award-winning still and sparkling Welsh wines from grapes grown in the Vale of Glamorgan. Their current portfolio includes a Still Rosé, named Rhos, and Still White and Sparkling White wines, both under the St Hilary label. Their debut wine, a 2023 vintage Pinot Noir and Pinot Meunier Rosé, has been released, known for its crisp, dry profile and fruit-forward notes. A traditional method sparkling white wine from their 2023 harvest is slated for release in early 2026, with a sparkling rosé from the 2024 harvest also in development. St Hilary Vineyard proudly states that its first-ever release of Welsh Sparkling Rosé, St Hilary, won a Gold at the WineGB Awards 2023.

The vineyard operates on low-intervention, organic principles and incorporates regenerative viticulture techniques. They cultivate Chardonnay, Pinot Noir, and Pinot Meunier grape varieties. While they aim to produce wines reflective of their unique terroir, their wines are currently crafted by the experienced team at Mountain People Wine in Tintern.
