Three Choirs Vineyards cultivates 75 acres of vines, producing a diverse range of still and sparkling wines. Their portfolio includes various Still White wines such as Bacchus, Siegerrebe, and Coleridge Hill, alongside Still Red wines like Ravens Hill and Pinot Noir Precoce, and a Rosé. They also produce a Late Harvest sweet wine and sparkling options, including a Classic Cuvée and Blanc de Noir, made using the traditional method. The vineyard has garnered numerous accolades, being one of England's most awarded vineyards. Most recently, at the 2025 London Tasting Awards, they secured Gold medals for their 2023 Pinot Noir and Sparkling Classic Cuvée, with their 2023 Bacchus receiving a silver. Three Choirs was also the first English vineyard to win a Gold medal at Vinexpo in Bordeaux.

They significantly limit pesticide use, implement water-saving cleaning methods, and use lightweight glass bottles and recyclable screw caps. All electricity used across the vineyard, brasserie, and guest rooms is sourced from 100% renewable green sources, and food waste is converted into electricity off-site. They also avoid single-use plastics and upcycle red grape skins into a spirit called "Dappa" in partnership with Devon Distillery. The vineyard operates its own state-of-the-art winery on site.
