The Wine
Lympstone Manor's vineyard, planted in 2018, primarily cultivates classic Champagne varieties: Pinot Noir, Meunier, and Chardonnay. While focused on producing high-quality bottle-fermented sparkling wines, they also craft small quantities of still white, rosé, and red wines in exceptional vintages. Their estate wines include the Lympstone Manor Classic Cuvée, Triassic Pinot Noir, Isabeau Rosé, and Edwards Chardonnay. They also produce a premium gin and an Eau de Vie de Marc. The wines and spirits have garnered significant recognition. The Lympstone Manor Triassic Pinot Noir 2020 received a Gold Medal at the International Wine Challenge Awards in 2023, making it the only English red wine to achieve this that year. Their Classic Cuvée 2020 won a Gold Medal and "Best in Show by Country Category" at the London Wine Competition in 2024, alongside a Silver Medal at the International Wine Challenge. The Isabeau Rosé 2022 has also received multiple bronze and silver medals from prestigious competitions in 2024. In 2025, their Gin earned a Silver award and the Eau de Vie de Marc a Bronze at the International Wine and Spirits Competition. Lympstone Manor holds the distinction of being the only Michelin-star Hotel-Restaurant with its own award-winning vineyard.
The vineyard is deeply committed to sustainability, integrating practices such as eliminating single-use plastics, robust waste recycling, and biodiversity management, including beehives and rewilding efforts. They actively support regenerative farming practices through local sourcing and have joined the Relais & Châteaux 'In Harmony with all Life on Earth' initiative with UNESCO.
Lympstone Manor produces its wines in partnership with Lyme Bay Winery.
