The Wine

Daws Hill Vineyard is dedicated to producing high-quality English sparkling wines using traditional methods. They cultivate classic Champagne grape varieties, including Chardonnay, Pinot Noir, and Pinot Meunier, along with Auxerrois, specifically for their sparkling wine production. There are no current plans to produce still wines. In addition to wine, they also craft a selection of ciders from locally picked apples.

The vineyard boasts its own winery on site, ensuring that everything from grape cultivation to bottling is handled in-house. Wines are small-batch fermented and bottled, with each bottle lovingly aged for a minimum of four years in their converted stables before release.

Daws Hill wines have received notable recognition, consistently winning medals at the Thames and Chilterns Vineyards Association Awards. Their Sparkling Auxerrois Blanc 2018 notably secured a Gold Medal in 2023, while their Sparkling Rosé 2018 earned a Silver Medal.

While Daws Hill Vineyard does not publicly state specific certifications like Organic or Regenerative, their approach emphasizes a commitment to hands-on viticulture and winemaking, with a philosophy that "small is beautiful" and a focus on producing everything on-site.
